Spinach and feta pie

A DELICIOUS Greek-inspired spinach and feta pie is perfect for lunch or dinner and is easy to make.

DELIA AND LANA RAIZON

As the weather warms up, lighter meals are in order. Simple and delicious, this Greek-inspired spinach and feta pie is perfect for lunch or dinner. Continue the theme and serve with a fresh Greek salad.

Ingredients
3 x 250g boxes chopped, frozen spinach, thawed and well drained
200g feta cheese
200g ricotta cheese
3 tbsp grated parmesan cheese
4 spring onions, finely chopped
4 eggs, lightly beaten
3 tbsp chopped parsley
10 sheets filo pastry
Olive oil spray

Method

Preheat oven to 180 degrees. In a large bowl, combine all filling ingredients together and mix well to combine.

Cover filo pastry with a clean, damp cloth. Spray an ovenproof dish and lay down the first sheet of filo. Continue to lay down four more sheets, remembering to spray each sheet with olive oil to ensure each sheet sticks together.

Place the spinach mixture on top of the filo and spread evenly. Layer five more sheets of filo and spray oil over the top.

Tuck in edges and bake for 40 minutes, until top is crisp and golden.
